Bennett's Chocolate Chip Cookies - A Bee Attitudes Recipe

Granddad and Bennett enjoy having chocolate chip cookies together in the book Bee Attitudes: A Devotional for Families with Young Readers. You and your family can read about what happens on Day 4: Comfort - Matthew 5:4.

In the mean time, here's a recipe for cookies made with honey, the characters are bees after all! If you'd like some ideas for variations, please find them at the bottom of the page.


Bennett's Chocolate Chip Cookies
(Makes about 18 large cookies)
Ingredients
½ cup of honey
½ cup of brown sugar
1 cup of melted butter
2 eggs
1 tbsp olive oil
1 tsp vanilla extract
1 tsp baking soda
1 tsp salt
3 cups of flour
1 - 2 cups of chocolate chips


Instructions
With a grown-up's help:
Preheat the oven to 350oF
Place parchment paper on your cookie sheet.
In a bowl, mix melted butter, honey, vanilla extract, and olive oil.
Mix in eggs.
In a different large bowl, mix flour, salt, and baking soda.
Add the wet ingredients to the dry ingredients and mix.
Add chocolate chips and mix.
Use a tablespoon to scoop out cookie dough and place it on the cookie sheet.
Place them in the oven and bake for 10 - 12 minutes (until they have started to brown on the bottom).
Remove from the oven and allow them to cool.
Share and enjoy!

Variations:
More honey?
You can take out the brown sugar and use more honey instead (1 cup in total).
Dairy free?
If you need to avoid butter, here are some alternatives. One cup of butter can be substituted with 3/4 cup of oil or with 1 cup of applesauce.
1 cup of butter = 3/4 cup of oil
1 cup of butter = 1 cup of applesauce
Egg Free?
Aquafaba, liquid from chickpeas (also called garbanzo beans), is a substitute for eggs. The word aquafaba comes from Latin. "Aqua" meaning water. "Faba" meaning seed or bean. Here are two ways to get this egg replacement. You can find aquafaba in a can of chickpeas, just strain out the chickpeas. I usually boil my own chickpeas, and the water left behind is also aquafaba. You want to boil that liquid down until it is the about the consistency of raw egg whites.
1 whole egg = 3 tablespoons of aquafaba
1 egg white = 2 tablespoons of aquafaba
Granddad's Tip
Bake only some of the cookies today. Refrigerate or freeze the rest of the dough for a different day.
Bea's Tip
Wash the dishes and the counter while you wait for the cookies to cool. That way the cookies will be a reward after the work is done.

This recipe is based two recipes. The first is one my sister gave me years ago. Hers calls for brown sugar. Since Bennett is a bee, I thought it would be fun to add honey to the mix. I found this recipe by Jas at Baking on Thyme.
